These Watermelon Margarita Popsicles are a refreshing, no sugar added treat perfect for a hot day or a festive gathering. Made with fresh watermelon, lime juice, silver tequila, and a pinch of sea salt, they capture the classic margarita flavors in a healthy, icy popsicle form. They’re easy to make, naturally sweetened by the watermelon, and provide a delicious adult twist on a summer favorite.

  • 1 small watermelon (about 5-6 pounds), cut into pieces, rind discarded
  • Juice of 1 lime
  • 4 ounces silver tequila
  • 1/4 teaspoon sea salt (or to taste)


Instructions

  1. Blend the Watermelon: Cut the watermelon into small pieces, discarding the rind, and place the chunks into a blender. Blend until the watermelon is completely pulverized into a smooth puree.
  2. Add Lime, Tequila, and Salt: Pour the lime juice, silver tequila, and sea salt into the blender with the watermelon puree. Blend again briefly until the ingredients are fully combined.
  3. Pour into Molds and Freeze: Carefully pour the mixture into popsicle molds, leaving a little space at the top to allow for expansion during freezing. Freeze the molds for about 2 to 2.5 hours, then insert the popsicle sticks and continue freezing for an additional 3 to 4 hours until fully set.
  4. Remove and Serve: To remove the popsicles easily, fill a sink or large bowl with hot water and briefly dip the popsicle molds for a few seconds. The popsicles should slide out smoothly. Transfer any remaining popsicles to a large freezer-safe bag to keep fresh.

Notes

  • Do not fill the popsicle molds to the very top as the liquid will expand when frozen.
  • If you prefer a less boozy version, reduce the tequila amount and adjust lime and salt to taste.
  • For best results, use a seedless watermelon or remove seeds before blending.
  • Make sure to use silver tequila (blanco) for the freshest flavor.
  • Freezing times can vary depending on your freezer, so adjust as necessary for completely solid popsicles.
