Description

A refreshing and healthy Tzatziki Chicken Salad featuring tender cooked chicken, crisp romaine lettuce, grape tomatoes, olives, and pepperoncini, all tossed with a creamy homemade tzatziki sauce made from Greek yogurt, cucumber, garlic, and fresh dill. This quick and easy salad is perfect for a light lunch or dinner.

Ingredients

Scale

Tzatziki Sauce

  • 1 cup + 2 Tbsp plain Greek yogurt
  • ½ cucumber, grated
  • 2 to 3 garlic cloves, pressed
  • 2 Tbsp olive oil
  • 2 Tbsp fresh dill, chopped
  • Salt and pepper to taste

Salad

  • 2 cups cooked chicken, chopped
  • 2 cups romaine lettuce, chopped
  • 1 cup grape tomatoes, halved
  • ½ cup pepperoncini peppers, sliced
  • ½ cup Kalamata olives, sliced
  • ¼ cup red onion, chopped
  • ½ cup feta cheese, crumbled

Instructions

  1. Prepare the Tzatziki: In a bowl, combine the Greek yogurt, grated cucumber, pressed garlic cloves, olive oil, and chopped fresh dill. Season the mixture with salt and pepper, then stir thoroughly until the sauce is smooth and well blended.
  2. Assemble the Salad: In a large mixing bowl, add the chopped romaine lettuce, halved grape tomatoes, sliced pepperoncini peppers, Kalamata olives, and chopped red onion. Toss gently to mix the ingredients evenly.
  3. Add the Chicken: Evenly layer the chopped cooked chicken over the mixed vegetables in the salad bowl.
  4. Dress with Tzatziki: Spoon the prepared tzatziki sauce evenly over the salad and chicken to coat and add flavor.
  5. Garnish & Serve: Sprinkle crumbled feta cheese on top of the dressed salad. Serve immediately to enjoy the freshness and vibrant flavors.

Notes

  • Use freshly cooked or rotisserie chicken for the best flavor and convenience.
  • Grate the cucumber finely to prevent excess water in the tzatziki sauce. Optionally, squeeze out excess moisture.
  • Adjust garlic and dill quantities according to your taste preference.
  • This salad is best served fresh but can be stored chilled for up to 24 hours.
  • For a vegetarian option, omit chicken and add chickpeas or grilled vegetables.
