Sweet Potatoes
- 4 medium sweet potatoes
- 1 tablespoon olive oil
Turkey Taco Filling
- 1 pound ground turkey
- 1 small onion, diced
- 2 cloves garlic, minced
- 2 tablespoons taco seasoning
- 1/4 cup water
- 1/2 cup canned black beans, rinsed and drained
- 1/2 cup corn (fresh, canned, or frozen)
- Salt and pepper to taste

- 1/2 cup shredded cheddar cheese
- 1/4 cup chopped fresh cilantro
- Optional: diced avocado, salsa, sour cream, lime wedges
Instructions
- Roast Sweet Potatoes: Preheat the oven to 400°F. Pierce the sweet potatoes several times with a fork and place them on a baking sheet. Roast for 40–45 minutes, or until tender.
- Cook Turkey Filling: While the sweet potatoes bake, heat olive oil in a large skillet over medium heat. Add diced onion and sauté for 2–3 minutes until softened. Stir in minced garlic and cook for 30 seconds more.
- Brown Turkey: Add ground turkey to the skillet and cook until browned, breaking it up with a spatula as it cooks.
- Add Seasoning and Simmer: Stir in taco seasoning and 1/4 cup water. Simmer the mixture for 3–4 minutes to meld the flavors.
- Mix in Vegetables: Add black beans and corn to the turkey mixture. Season with salt and pepper to taste. Stir well and remove from heat.
- Prepare Sweet Potatoes: When sweet potatoes are tender, remove them from the oven and let them cool slightly. Slice each sweet potato lengthwise and fluff the inside with a fork.
- Assemble: Spoon the turkey taco filling evenly into each sweet potato.
- Add Cheese and Garnish: Top each stuffed sweet potato with shredded cheddar cheese and allow it to melt slightly. Garnish with chopped fresh cilantro and any optional toppings such as diced avocado, salsa, sour cream, or lime wedges. Serve warm.
Notes
- For a quicker preparation, microwave the sweet potatoes by poking holes with a fork and cooking on high for 6–8 minutes until tender.
- Ground beef or shredded chicken can be substituted for the ground turkey if preferred.
