Turkey Taco Filling

  • 3/4 pound lean ground turkey
  • 4 garlic cloves, minced
  • 1 teaspoon chili powder
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon paprika
  • 1 1/4 cup canned crushed tomatoes

Topping

  • 1/4 cup grated pepper jack cheese


Instructions

  1. Prepare the Sweet Potatoes: Pierce sweet potatoes several times with a fork and microwave on high for 8-10 minutes until soft and tender. Let them cool slightly to handle safely.
  2. Mash Sweet Potato Flesh: Cut cooked sweet potatoes in half lengthwise, scoop out the flesh into a bowl, and mash with olive oil, 1 teaspoon of cumin, 1/4 teaspoon salt, and 1/4 teaspoon ground pepper to create a flavorful base.
  3. Cook the Turkey Filling: Heat a skillet over medium heat and brown the ground turkey. Add minced garlic, chili powder, dried oregano, paprika, remaining 1/4 teaspoon cumin, 1/8 teaspoon salt, 1/8 teaspoon pepper, and crushed tomatoes. Stir well and cook for about one minute to combine flavors.
