Description

This easy and savory tortilla quiche combines the flaky texture of tortillas with a rich, flavorful egg custard filled with sautéed vegetables, savory breakfast sausage or bacon, and melty cheddar and mozzarella cheeses. Perfect for breakfast or brunch, it offers a delightful twist on traditional quiche with a tortilla crust that bakes crisp and golden. Ready in under an hour, it’s a crowd-pleasing dish that can be customized with your choice of vegetables or cheese for added flair.

Ingredients

Scale

Crust

  • 6 small flour tortillas
  • 1 tablespoon olive oil

Filling

  • 1/2 cup diced onion
  • 1 cup diced bell pepper (any color)
  • 1 cup cooked and crumbled breakfast sausage or chopped bacon
  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded mozzarella cheese
  • 6 large eggs
  • 1/2 cup whole milk
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon smoked paprika

Garnish

  • Chopped fresh parsley or chives (optional)

Instructions

  1. Preheat and Prepare the Crust: Preheat your oven to 375°F (190°C). Lightly grease a 9-inch pie dish or round baking dish to prevent sticking. Stack the 6 tortillas and cut them in half. Layer the tortilla halves in the dish, slightly overlapping each piece, to form a crust that covers the bottom and sides completely.
  2. Sauté Vegetables: Heat the olive oil in a medium skillet over medium heat. Add the diced onion and bell pepper, sautéing them for 4 to 5 minutes or until they soften and become fragrant. Remove the skillet from heat and set aside to cool slightly.
  3. Mix Egg Custard: In a large mixing bowl, whisk together the eggs, whole milk, salt, black pepper, garlic powder, and smoked paprika until fully combined and slightly frothy.
  4. Combine Filling Ingredients: To the egg mixture, add the sautéed onion and bell pepper, cooked sausage or bacon, shredded cheddar, and shredded mozzarella cheese. Stir gently until all ingredients are evenly distributed.
  5. Fill and Bake: Pour the egg and filling mixture evenly over the tortilla-lined crust in the pie dish. Place the dish in the preheated oven and bake for 35 to 40 minutes, or until the center is set and the top turns a light golden brown.
  6. Rest and Serve: Remove the quiche from the oven and let it rest for 10 minutes to allow it to firm up. Garnish with chopped fresh parsley or chives if desired, slice into 6 portions, and serve warm.

Notes

  • You can substitute the bell peppers with other vegetables such as spinach, mushrooms, or zucchini for variety.
  • For a spicier twist, swap cheddar cheese for pepper jack cheese or add chopped jalapeños to the filling.
  • This quiche reheats well, making it ideal for meal prep or quick breakfasts throughout the week.
  • Using gluten-free tortillas makes this recipe suitable for those seeking gluten-friendly options.
