Ingredients
Scale
Crust
- 6 small flour tortillas
- 1 tablespoon olive oil
Filling
- 1/2 cup diced onion
- 1 cup diced bell pepper (any color)
- 1 cup cooked and crumbled breakfast sausage or chopped bacon
- 1 cup shredded cheddar cheese
- 1/2 cup shredded mozzarella cheese
- 6 large eggs
- 1/2 cup whole milk
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon garlic powder
- 1/4 teaspoon smoked paprika
Garnish
- Chopped fresh parsley or chives (optional)
Instructions
- Preheat and Prepare the Crust: Preheat your oven to 375°F (190°C). Lightly grease a 9-inch pie dish or round baking dish to prevent sticking. Stack the 6 tortillas and cut them in half. Layer the tortilla halves in the dish, slightly overlapping each piece, to form a crust that covers the bottom and sides completely.
- Sauté Vegetables: Heat the olive oil in a medium skillet over medium heat. Add the diced onion and bell pepper, sautéing them for 4 to 5 minutes or until they soften and become fragrant. Remove the skillet from heat and set aside to cool slightly.
- Mix Egg Custard: In a large mixing bowl, whisk together the eggs, whole milk, salt, black pepper, garlic powder, and smoked paprika until fully combined and slightly frothy.
- Combine Filling Ingredients: To the egg mixture, add the sautéed onion and bell pepper, cooked sausage or bacon, shredded cheddar, and shredded mozzarella cheese. Stir gently until all ingredients are evenly distributed.
- Fill and Bake: Pour the egg and filling mixture evenly over the tortilla-lined crust in the pie dish. Place the dish in the preheated oven and bake for 35 to 40 minutes, or until the center is set and the top turns a light golden brown.
- Rest and Serve: Remove the quiche from the oven and let it rest for 10 minutes to allow it to firm up. Garnish with chopped fresh parsley or chives if desired, slice into 6 portions, and serve warm.
Notes
- You can substitute the bell peppers with other vegetables such as spinach, mushrooms, or zucchini for variety.
- For a spicier twist, swap cheddar cheese for pepper jack cheese or add chopped jalapeños to the filling.
- This quiche reheats well, making it ideal for meal prep or quick breakfasts throughout the week.
