Description

This Syrian Chickpea and Yogurt Casserole is a comforting and flavorful baked dish combining tender chickpeas, aromatic spices, and creamy yogurt. Chickpea Mixture

  • 2 cups cooked chickpeas
  • 1 cup onion, finely chopped
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon paprika
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper
  • 1/4 cup olive oil
  • Salt to taste

Yogurt Layer and Garnish

  • 2 cups plain yogurt
  • 1/4 cup fresh parsley, chopped


Instructions

  1. Preheat the Oven: Preheat your oven to 350°F (175°C) to get it ready for baking the casserole.
  2. Sauté Onions and Garlic: In a skillet over medium heat, heat the olive oil and sauté the finely chopped onions and minced garlic until they become soft and fragrant, approximately 5-7 minutes.
  3. Add Chickpeas and Spices: Stir in the cooked chickpeas along with ground cumin, ground coriander, paprika, black pepper, cayenne pepper, and salt. Mix well to combine all the flavors and cook for a few more minutes to warm through.
  4. Layer the Dish: In a baking dish, spread half of the chickpea mixture evenly. Pour and spread the plain yogurt over it, then layer the remaining chickpea mixture on top.
  5. Add Parsley and Bake: Sprinkle the chopped fresh parsley on top of the casserole. Place the dish in the preheated oven and bake for 30 minutes until heated through and slightly golden on top.
  6. Serve Warm: Remove from the oven and serve the casserole warm as a comforting vegetarian main course or side dish.

  • You can use either canned or freshly cooked chickpeas; just ensure they are well drained if canned.
