Chickpea Mixture
- 2 cups cooked chickpeas
- 1 cup onion, finely chopped

- 1/4 teaspoon cayenne pepper
- 1/4 cup olive oil
- Salt to taste
Yogurt Layer and Garnish
- 2 cups plain yogurt
- 1/4 cup fresh parsley, chopped
Instructions
- Preheat the Oven: Preheat your oven to 350°F (175°C) to get it ready for baking the casserole.
- Sauté Onions and Garlic: In a skillet over medium heat, heat the olive oil and sauté the finely chopped onions and minced garlic until they become soft and fragrant, approximately 5-7 minutes.
- Add Chickpeas and Spices: Stir in the cooked chickpeas along with ground cumin, ground coriander, paprika, black pepper, cayenne pepper, and salt. Mix well to combine all the flavors and cook for a few more minutes to warm through.
- Layer the Dish: In a baking dish, spread half of the chickpea mixture evenly. Pour and spread the plain yogurt over it, then layer the remaining chickpea mixture on top.
- Add Parsley and Bake: Sprinkle the chopped fresh parsley on top of the casserole. Place the dish in the preheated oven and bake for 30 minutes until heated through and slightly golden on top.
- Serve Warm: Remove from the oven and serve the casserole warm as a comforting vegetarian main course or side dish.
