Description
Sweet Roasted Rhubarb is a simple and delightful dessert featuring tender, caramelized rhubarb pieces roasted with sugar, vanilla, and warm spices for a naturally tangy-sweet treat that can be enjoyed on its own or as a topping for yogurt or ice cream.
Ingredients
Scale
Rhubarb
- 4 cups rhubarb, chopped into 1-inch pieces
Sweeteners and Flavorings
- 1/4 cup granulated sugar
- 1 tablespoon honey (optional for extra sweetness)
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon ground cinnamon (optional)
- 1 tablespoon fresh orange juice (optional, for added zest)
Instructions
- Preheat Oven: Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or a silicone baking mat to prevent sticking and ease cleanup.
- Mix Ingredients: In a large bowl, toss the chopped rhubarb with granulated sugar, optional honey, vanilla extract, optional cinnamon, and optional fresh orange juice until the rhubarb pieces are evenly coated with the mixture.
- Arrange on Baking Sheet: Spread the rhubarb mixture evenly on the prepared baking sheet to ensure even roasting and caramelization.
- Roast Rhubarb: Place the baking sheet in the preheated oven and roast the rhubarb for 25-30 minutes. Stir the rhubarb once halfway through the cooking time to promote even tenderness and caramelization. Watch for a soft texture and juices released by the rhubarb.
- Cool Slightly: Remove the roasted rhubarb from the oven and allow it to cool slightly so the flavors settle and it’s comfortable to serve.
- Serve: Enjoy the roasted rhubarb warm or at room temperature. It pairs beautifully over yogurt, ice cream, or as a standalone simple dessert.
Notes
- You can adjust the sweetness by omitting the honey or using more sugar depending on your taste and the tartness of your rhubarb.
- Optional cinnamon and orange juice add warmth and citrus brightness but can be skipped if preferred.
- Ensure rhubarb is cut into uniform pieces for even roasting.
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
- Roasted rhubarb can also be used as a topping for pancakes, waffles, or oatmeal.
