Ingredients
Crust:
1 package refrigerated pie crusts (2 crusts)
Filling:
1 cup mashed sweet potato (roasted and peeled), 1/3 cup brown sugar, 1/4 cup heavy cream, 1 large egg, 1 teaspoon vanilla extract, 1/2 teaspoon ground cinnamon, 1/4 teaspoon ground nutmeg, Pinch of salt
Optional Toppings:
whipped cream, chopped pecans, mini marshmallows
Instructions
- Preheat the oven and prepare the pan: Preheat the oven to 375°F and grease a mini muffin pan. Roll out the pie crusts and cut circles to form crusts.
- Prepare the filling: Mix sweet potato, brown sugar, cream, egg, vanilla, spices, and salt until smooth.
