Sweet Potato Mash

  • 2 pounds sweet potatoes, peeled and cut into chunks
  • 2 tablespoons unsalted butter
  • 1 to 2 chipotle peppers in adobo sauce, minced
  • 1 tablespoon adobo sauce from the chipotle can
  • 1 tablespoon fresh lime juice
  • 1 teaspoon lime zest
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper

Instructions

  1. Prepare Sweet Potatoes: Place the sweet potato chunks in a large pot and cover with cold water. Bring the water to a boil over high heat.
  2. Simmer Until Tender: Reduce heat to a simmer and cook the sweet potatoes until they are tender when pierced with a fork, about 15 to 20 minutes.
  3. Drain and Return to Pot: Drain the sweet potatoes well and return them to the pot while still warm.
  4. Add Flavorings: Add the unsalted butter, minced chipotle peppers, adobo sauce, fresh lime juice, lime zest, ground cumin, kosher salt, and freshly ground black pepper to the sweet potatoes.
  5. Mash Until Smooth: Mash the sweet potatoes and seasonings together until smooth and creamy, adjusting seasoning to taste for desired spice and saltiness.
