Sweet Potato Mash
- 2 pounds sweet potatoes, peeled and cut into chunks
- 2 tablespoons unsalted butter
- 1 to 2 chipotle peppers in adobo sauce, minced
- 1 tablespoon adobo sauce from the chipotle can
- 1 tablespoon fresh lime juice
- 1 teaspoon lime zest
- 1/2 teaspoon ground cumin
- 1/2 teaspoon kosher salt
- 1/4 teaspoon freshly ground black pepper

Instructions
- Prepare Sweet Potatoes: Place the sweet potato chunks in a large pot and cover with cold water. Bring the water to a boil over high heat.
- Simmer Until Tender: Reduce heat to a simmer and cook the sweet potatoes until they are tender when pierced with a fork, about 15 to 20 minutes.
- Drain and Return to Pot: Drain the sweet potatoes well and return them to the pot while still warm.
- Add Flavorings: Add the unsalted butter, minced chipotle peppers, adobo sauce, fresh lime juice, lime zest, ground cumin, kosher salt, and freshly ground black pepper to the sweet potatoes.
- Mash Until Smooth: Mash the sweet potatoes and seasonings together until smooth and creamy, adjusting seasoning to taste for desired spice and saltiness.
- Serve: Transfer the mash to a serving bowl and garnish with chopped fresh cilantro if desired. Serve hot as a delicious side dish.
