Description

This classic Peach Cobbler recipe features juicy, tender peaches baked under a sweet, cinnamon-spiced batter topping. Perfectly golden and bubbling with peach juices, this comforting dessert is easy to make and ideal for any occasion. Serve warm with vanilla ice cream for a delightful treat.

Ingredients

Scale

Peach Filling

  • 6-7 large peaches (about 900 grams, sliced)
  • ½ cup granulated sugar (100 grams)
  • 2 teaspoons cornstarch (6 grams)
  • ¼ teaspoon ground cinnamon
  • 1 tablespoon lemon juice (14 grams)

Batter

  • 8 tablespoons salted butter (113 grams, 1 stick)
  • 1¼ cups all-purpose flour (150 grams)
  • 1½ teaspoons baking powder (6 grams)
  • ½ teaspoon kosher salt
  • ½ cup granulated sugar (100 grams)
  • ½ cup brown sugar (107 grams)
  • ½ teaspoon ground cinnamon
  • ¾ cup milk (170 grams)
  • 2 teaspoons pure vanilla extract (8 grams)

Instructions

  1. Preheat and Prepare Peaches: Preheat the oven to 350°F (175°C). Wash the peaches thoroughly and slice them into wedges.
  2. Mix Peach Filling: In a large bowl, combine the sliced peaches, ½ cup granulated sugar, cornstarch, ¼ teaspoon cinnamon, and lemon juice. Gently toss to coat the peaches evenly and set aside, allowing the sugar to draw out the juices.
  3. Melt Butter in Baking Dish: Place the 8 tablespoons of salted butter in a 9×13-inch baking dish and put it in the preheated oven to melt the butter completely.
  4. Prepare Batter Dry Ingredients: Meanwhile, in a separate large bowl, whisk together flour, baking powder, salt, ½ cup granulated sugar, brown sugar, and ½ teaspoon cinnamon until well combined.
  5. Add Wet Ingredients to Batter: In a measuring cup, stir together the milk and vanilla extract. Pour this mixture into the dry ingredients and stir until just combined.
  6. Combine Batter and Butter: Remove the baking dish with melted butter from the oven. Pour the batter evenly over the melted butter in the baking dish. Do not stir.
  7. Add Peaches on Top: Spoon the peach mixture evenly over the batter, making sure to include the juices for extra flavor and moisture.
  8. Bake the Cobbler: Place the baking dish back into the oven and bake for 40-45 minutes until the cobbler is golden brown and the peach juices are bubbling around the edges.
  9. Cool and Serve: Remove the cobbler from the oven and allow it to cool for about 5 minutes. Serve warm, ideally with a scoop of vanilla ice cream.

Notes

  • Use ripe but firm peaches for the best texture and sweetness.
  • If fresh peaches are not available, frozen peaches can be used but thaw and drain excess liquid before mixing.
  • For a dairy-free version, substitute butter and milk with plant-based alternatives.
  • The lemon juice helps to balance sweetness and prevents the peaches from browning.
  • Do not stir the batter after pouring it into the butter to achieve a layered cobbler texture.
