Description

Indulge in the tropical flavors of Thailand with these delightful Sweet Mango Sticky Rice Rolls. Creamy coconut-infused sticky rice pairs perfectly with fresh mango, all wrapped up in a chewy rice paper roll for a sweet vegan dessert treat.


Ingredients

Sticky Rice:

1 cup glutinous (sticky) rice
1 1/4 cups coconut milk
1/4 cup granulated sugar
1/4 teaspoon salt

Filling:

2 ripe mangoes (peeled and sliced)

Wrapping:

6 rice paper wrappers
1 tablespoon toasted sesame seeds (optional)
fresh mint leaves for garnish (optional)


Instructions

  1. Rinse and Soak Rice: Rinse sticky rice and soak for at least 4 hours. Steam for 25–30 minutes.
  2. Prepare Coconut Sauce: Heat coconut milk, sugar, and salt until hot. Reserve 1/4 cup.
  3. Coat Rice: Pour coconut sauce over cooked rice. Allow to absorb for 15–20 minutes.
  4. Assemble Rolls: Soften rice paper, add rice and mango, fold, and roll tightly.
  5. Serve: Drizzle with reserved sauce, sesame seeds, and mint leaves.

Notes

  • You can substitute rice paper with soy paper for a different texture.
  • Add a splash of vanilla or a pandan leaf for extra flavor.
  • Best served fresh, but can be refrigerated for up to a day.
