Sticky Rice:
1 cup glutinous (sticky) rice
1 1/4 cups coconut milk
1/4 cup granulated sugar
1/4 teaspoon salt
Filling:
2 ripe mangoes (peeled and sliced)
Wrapping:
6 rice paper wrappers
1 tablespoon toasted sesame seeds (optional)
fresh mint leaves for garnish (optional)
Instructions
- Rinse and Soak Rice: Rinse sticky rice and soak for at least 4 hours. Steam for 25–30 minutes.
- Prepare Coconut Sauce: Heat coconut milk, sugar, and salt until hot. Reserve 1/4 cup.
- Coat Rice: Pour coconut sauce over cooked rice. Allow to absorb for 15–20 minutes.
- Assemble Rolls: Soften rice paper, add rice and mango, fold, and roll tightly.
- Serve: Drizzle with reserved sauce, sesame seeds, and mint leaves.
Notes
- You can substitute rice paper with soy paper for a different texture.
- Add a splash of vanilla or a pandan leaf for extra flavor.
- Best served fresh, but can be refrigerated for up to a day.
