Potatoes:

  • 2 lbs red potatoes (washed and cut into bite-sized chunks)

Sausage:

  • 1/2 lb smoked sausage (sliced)

Vegetables:

  • 1 medium onion (chopped)
  • 1 green bell pepper (chopped)
  • 3 cloves garlic (minced)

Seasonings:

  • 2 tbsp vegetable oil or bacon grease
  • 1 tsp Cajun seasoning
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp paprika

Additional:

  • 1/4 cup chicken broth or water
  • Chopped green onions for garnish (optional)

Instructions

  1. Heat the oil: Heat oil or bacon grease in a large skillet or Dutch oven over medium heat.
  2. Cook sausage: Add sausage slices and cook until browned, about 5–6 minutes. Remove and set aside.
  3. Sauté vegetables: In the same pan, cook onion and bell pepper until softened, then add garlic and cook briefly.
  4. Add potatoes and seasonings: Stir in potatoes, Cajun seasoning, salt, pepper, and paprika.
  5. Cook: Return sausage to the pan, pour in broth or water, cover, and cook for 20–25 minutes until potatoes are tender.
  6. Finish: Remove the lid for the last 5 minutes to let excess liquid evaporate. Garnish with green onions and serve hot.

Notes

  • For extra smoky flavor, consider adding liquid smoke or using andouille sausage.
  • This dish pairs well with cornbread or rice as a main dish or side.
