- 2 cups fresh strawberries (hulled and halved)
- 1/2 cup fresh lemon juice (about 3–4 lemons)
- 1/4 cup honey or maple syrup (adjust to taste)
- 1/2 cup water
- 1 teaspoon lemon zest
Instructions
- Blend Ingredients: In a blender, combine the strawberries, lemon juice, honey or maple syrup, water, and lemon zest. Blend the mixture until completely smooth, ensuring all the fruit and zest are well incorporated.
- Adjust Sweetness: Taste the blended mixture and adjust the sweetness by adding more honey or maple syrup if desired, blending again briefly to mix.
- Fill Molds: Pour the mixture evenly into popsicle molds, leaving about half an inch of space at the top to allow for expansion during freezing.
- Insert Sticks and Freeze: Insert the popsicle sticks into the molds and place them in the freezer. Freeze for at least 4 to 6 hours, or until the popsicles are completely solid.
- Release Popsicles: To remove the popsicles from the molds, run the molds under warm water for a few seconds to loosen them gently. Carefully pull the popsicles out by the sticks.
