  • 1/2 cup fresh lemon juice (about 3–4 lemons)
  • 1/4 cup honey or maple syrup (adjust to taste)
  • 1/2 cup water
  • 1 teaspoon lemon zest


Instructions

  1. Blend Ingredients: In a blender, combine the strawberries, lemon juice, honey or maple syrup, water, and lemon zest. Blend the mixture until completely smooth, ensuring all the fruit and zest are well incorporated.
  2. Adjust Sweetness: Taste the blended mixture and adjust the sweetness by adding more honey or maple syrup if desired, blending again briefly to mix.
  3. Fill Molds: Pour the mixture evenly into popsicle molds, leaving about half an inch of space at the top to allow for expansion during freezing.
  4. Insert Sticks and Freeze: Insert the popsicle sticks into the molds and place them in the freezer. Freeze for at least 4 to 6 hours, or until the popsicles are completely solid.
  5. Release Popsicles: To remove the popsicles from the molds, run the molds under warm water for a few seconds to loosen them gently. Carefully pull the popsicles out by the sticks.
