Chickpea Mixture:
- 1 can (15 oz) chickpeas, drained and rinsed
- 1 cup fresh strawberries (hulled and halved)
- 2 tablespoons tahini
- 2 tablespoons lemon juice
- 2 tablespoons maple syrup or honey
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 2 to 4 tablespoons water (as needed for consistency)
Instructions
- Blend Ingredients: In a food processor, combine the chickpeas, strawberries, tahini, lemon juice, maple syrup (or honey), vanilla extract, and salt. Blend until smooth, scraping down the sides as needed.
- Adjust Consistency: Add water a tablespoon at a time to reach your desired consistency. Continue blending until creamy and well combined.
- Adjust Taste: Taste and adjust sweetness or lemon juice as desired.
- Serve: Transfer to a bowl and serve chilled or at room temperature with sliced fruit, crackers, or pita chips.
Notes
- For a thicker dip, reduce water or refrigerate before serving.
- This hummus also works as a spread on toast or in wraps.
