Chickpea Mixture:

  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 cup fresh strawberries (hulled and halved)
  • 2 tablespoons tahini
  • 2 tablespoons lemon juice
  • 2 tablespoons maple syrup or honey
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 2 to 4 tablespoons water (as needed for consistency)


Instructions

  1. Blend Ingredients: In a food processor, combine the chickpeas, strawberries, tahini, lemon juice, maple syrup (or honey), vanilla extract, and salt. Blend until smooth, scraping down the sides as needed.
  2. Adjust Consistency: Add water a tablespoon at a time to reach your desired consistency. Continue blending until creamy and well combined.
  3. Adjust Taste: Taste and adjust sweetness or lemon juice as desired.
  4. Serve: Transfer to a bowl and serve chilled or at room temperature with sliced fruit, crackers, or pita chips.

Notes

  • For a thicker dip, reduce water or refrigerate before serving.
  • This hummus also works as a spread on toast or in wraps.
  • Use frozen strawberries (thawed and drained) if fresh aren’t available.
