Description

A refreshing and healthy Strawberry Chicken Salad combining tender cooked chicken breast with fresh strawberries, mixed greens, crunchy almonds, and tangy feta cheese, all tossed in a light balsamic vinaigrette. Perfect for a quick, no-cook meal that’s perfect for summer lunches or light dinners.

Ingredients

Scale

Salad

  • 2 cups cooked chicken breast, shredded or chopped
  • 4 cups mixed salad greens (such as spinach, arugula, or spring mix)
  • 1 cup fresh strawberries, hulled and sliced
  • 1/4 cup sliced almonds
  • 1/4 cup crumbled feta cheese
  • 1/4 red onion, thinly sliced
  • 1/2 avocado, diced (optional)

Dressing

  • 2 tablespoons balsamic vinegar
  • 1 tablespoon olive oil
  • 1 teaspoon honey
  • Salt and pepper to taste

Instructions

  1. Prepare the salad base: In a large bowl, combine the mixed salad greens, shredded chicken, sliced strawberries, thinly sliced red onion, sliced almonds, and crumbled feta cheese. If you choose to use avocado, add the diced pieces now for added creaminess.
  2. Make the dressing: In a small bowl, whisk together the balsamic vinegar, olive oil, honey, salt, and pepper until the ingredients are fully emulsified and smooth.
  3. Toss the salad: Drizzle the prepared dressing over the salad mixture and toss gently to evenly coat all ingredients with the dressing without bruising the delicate greens and fruit.
  4. Serve or chill: Serve the salad immediately for optimal freshness, or refrigerate for 10 to 15 minutes to enjoy a cooler, more refreshing dish.

Notes

  • Grilled or rotisserie chicken work well as quick, flavorful protein options.
  • Substitute goat cheese for feta or walnuts for almonds if preferred.
  • For a creamier dressing, add a teaspoon of Dijon mustard or Greek yogurt to the dressing mixture.
