Instructions

  1. Prepare the cheesecake filling: In a mixing bowl, beat the softened cream cheese, powdered sugar, and vanilla extract together until smooth and creamy. Set this mixture aside for later use.
  2. Make the strawberry jam: In a small saucepan over medium heat, combine diced strawberries, granulated sugar, and cornstarch. Stir occasionally and cook until the mixture thickens into a jam-like consistency. Remove from heat and allow it to cool completely.
  3. Assemble the eggrolls: Lay an eggroll wrapper flat on a surface with one corner pointing toward you, forming a diamond shape. Spoon about 1 tablespoon of the cheesecake filling into the center, then add 1 teaspoon of the cooled strawberry mixture on top. Fold the bottom corner over the filling, fold in the sides, then roll tightly away from you. Seal the edge by dabbing water on it.
  4. Fry the eggrolls: Heat about 2 inches of vegetable oil in a deep skillet or pot to 350°F (175°C).
