Instructions
- Preheat Oven: Preheat your oven to 300°F (150°C) to prepare for baking the egg bites.
- Prepare Molds: Lightly spray silicone molds with non-stick cooking spray to ensure easy removal of the egg bites after baking.
- Mix Eggs and Cream Cheese: In a bowl, whisk together the eggs, cream cheese, salt, and pepper until the mixture is smooth and well combined.
- Add Vegetables and Cheese: Gently fold in the chopped spinach, diced bell peppers, and shredded cheddar cheese to the egg mixture, distributing the ingredients evenly.
- Fill Molds: Pour the egg mixture into the silicone molds, filling each about three-quarters full to allow room for puffing while baking.
- Bake: Place the molds in the oven and bake for 25-30 minutes until the tops are puffed up, firm, and cooked through.
- Cool and Serve: Let the egg bites cool slightly before carefully removing them from the molds. Serve warm or store for later enjoyment.

- Use silicone molds or a muffin tin lined with parchment for easy removal.
