Description

Enjoy a delicious homemade version of Starbucks’ famous egg bites. These creamy, cheesy egg bites are packed with fresh spinach and bell peppers, baked to perfection for a satisfying breakfast or snack that’s easy to make and perfect for meal prep.

Ingredients

Scale

Egg Mixture

  • 6 large eggs
  • 4 oz full-fat cream cheese
  • Salt and pepper to taste

Add-ins

  • 1 cup shredded cheddar cheese
  • 1 cup fresh spinach, chopped
  • 1/2 cup diced bell peppers (red or yellow)

Other

  • Non-stick cooking spray

Instructions

  1. Preheat Oven: Preheat your oven to 300°F (150°C) to prepare for baking the egg bites.
  2. Prepare Molds: Lightly spray silicone molds with non-stick cooking spray to ensure easy removal of the egg bites after baking.
  3. Mix Eggs and Cream Cheese: In a bowl, whisk together the eggs, cream cheese, salt, and pepper until the mixture is smooth and well combined.
  4. Add Vegetables and Cheese: Gently fold in the chopped spinach, diced bell peppers, and shredded cheddar cheese to the egg mixture, distributing the ingredients evenly.
  5. Fill Molds: Pour the egg mixture into the silicone molds, filling each about three-quarters full to allow room for puffing while baking.
  6. Bake: Place the molds in the oven and bake for 25-30 minutes until the tops are puffed up, firm, and cooked through.
  7. Cool and Serve: Let the egg bites cool slightly before carefully removing them from the molds. Serve warm or store for later enjoyment.

Notes

  • Use silicone molds or a muffin tin lined with parchment for easy removal.
  • Feel free to customize with other veggies or add cooked bacon or sausage for extra flavor.
  • These egg bites can be stored in the refrigerator for up to 4 days and reheated in the microwave.
  • Ensure not to over-fill the molds to prevent overflow during baking.
