Description

For the cake:

  • 2 1/2 cups all-purpose flour
  • 2 1/2 teaspoons baking powder

  • 4 large eggs
  • 1 tablespoon vanilla extract
  • 1 cup whole milk
  • 2 chai tea bags (steeped in the milk)

For the frosting:

  • 1 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 1/4 cup heavy cream
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • pinch of salt

Optional garnish:

  • Ground cinnamon
  • Star anise
  • A sprinkle of brown sugar


Instructions

  1. Preheat the oven: Preheat the oven to 350°F (175°C). Grease and line three 8-inch cake pans with parchment paper.
  2. Prepare the chai-infused milk: Heat the milk in a saucepan until steaming, then steep the chai tea bags for 10 minutes. Let cool.
  3. Prepare the dry ingredients: Whisk together flour, baking powder, baking soda, salt, and spices in a bowl.
  4. Make the cake batter: Beat butter with sugars until fluffy. Add eggs and vanilla. Alternate adding dry ingredients and chai-infused milk to the butter mixture.
  5. Bake the cakes: Divide batter into pans and bake for 25–30 minutes. Cool before assembling.
  6. Make the frosting: Beat butter, add powdered sugar, cream, vanilla, cinnamon, and salt. Beat until fluffy.
  7. Assemble the cake: Stack layers with frosting, frost the outside, and garnish as desired. Chill before slicing.

Notes

  • Make the layers a day ahead for easier assembly.
  • You can use chai spice blend if chai tea bags are not available.
