Description

A classic Southern Macaroni and Cheese Casserole featuring creamy sharp cheddar cheese sauce baked to bubbly perfection with a crunchy Parmesan and cracker topping. This comforting casserole is perfect for family dinners or holiday gatherings.

Ingredients

Scale

Pasta

  • 2 cups elbow macaroni

Cheese Sauce

  • 1/4 cup unsalted butter
  • 1/4 cup all-purpose flour
  • 2 cups whole milk
  • 1 cup heavy cream
  • 3 cups shredded sharp cheddar cheese, divided
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon smoked paprika (optional)

Topping

  • 1/4 cup grated Parmesan cheese
  • 1/2 cup crushed Ritz crackers (optional)

Instructions

  1. Cook the Macaroni: Preheat your oven to 350°F (175°C). Bring a large pot of salted water to a boil. Add the elbow macaroni and cook until al dente, according to package instructions, usually around 7-8 minutes. Drain the cooked pasta and set it aside.
  2. Make the Cheese Sauce: In a medium saucepan over medium heat, melt the unsalted butter. Once melted, sprinkle in the flour and stir continuously for 1-2 minutes to create a roux, which helps thicken the sauce. Gradually pour in the whole milk and heavy cream while whisking nonstop to avoid lumps. Continue cooking and whisking until the mixture thickens, about 3-4 minutes.
  3. Add the Cheese: Remove the saucepan from heat. Stir in 2 1/2 cups of shredded sharp cheddar cheese until fully melted and the sauce is smooth. Season with salt, black pepper, and smoked paprika if using, mixing well to combine all flavors.
  4. Combine with Pasta: Pour the cheese sauce over the drained macaroni and toss gently to ensure all the pasta is coated with the cheesy sauce. Transfer the mixture into a greased 9×13-inch baking dish, spreading it evenly.
  5. Top and Bake: Sprinkle the remaining 1/2 cup shredded cheddar cheese evenly over the top of the macaroni. Add grated Parmesan cheese and the optional crushed Ritz crackers for a crunchy topping. Place the casserole in the preheated oven and bake for 25-30 minutes until it’s bubbly and the top is golden brown.
  6. Serve: Once baked, remove the casserole from the oven and let it cool for a few minutes before serving. This resting time helps it set for perfect serving portions.

Notes

  • You can use sharp or extra-sharp cheddar cheese for a stronger flavor.
  • Smoked paprika adds a subtle smoky depth but can be omitted for a milder taste.
  • For a gluten-free version, substitute all-purpose flour with a gluten-free flour blend and ensure the crackers are gluten-free.
  • Crushed Ritz crackers topping is optional but adds a lovely crunch to the casserole.
  • Leftovers can be refrigerated for up to 3 days and reheated in the oven or microwave.
