Cheese Sauce
- 1/4 cup unsalted butter

- 1/2 teaspoon black pepper
- 1/4 teaspoon smoked paprika (optional)
Topping
- 1/4 cup grated Parmesan cheese
- 1/2 cup crushed Ritz crackers (optional)
Instructions
- Cook the Macaroni: Preheat your oven to 350°F (175°C). Bring a large pot of salted water to a boil. Add the elbow macaroni and cook until al dente, according to package instructions, usually around 7-8 minutes. Drain the cooked pasta and set it aside.
- Make the Cheese Sauce: In a medium saucepan over medium heat, melt the unsalted butter. Once melted, sprinkle in the flour and stir continuously for 1-2 minutes to create a roux, which helps thicken the sauce. Gradually pour in the whole milk and heavy cream while whisking nonstop to avoid lumps. Continue cooking and whisking until the mixture thickens, about 3-4 minutes.
- Add the Cheese: Remove the saucepan from heat. Stir in 2 1/2 cups of shredded sharp cheddar cheese until fully melted and the sauce is smooth. Season with salt, black pepper, and smoked paprika if using, mixing well to combine all flavors.
- Combine with Pasta: Pour the cheese sauce over the drained macaroni and toss gently to ensure all the pasta is coated with the cheesy sauce. Transfer the mixture into a greased 9×13-inch baking dish, spreading it evenly.
- Top and Bake: Sprinkle the remaining 1/2 cup shredded cheddar cheese evenly over the top of the macaroni. Add grated Parmesan cheese and the optional crushed Ritz crackers for a crunchy topping. Place the casserole in the preheated oven and bake for 25-30 minutes until it’s bubbly and the top is golden brown.
- Serve: Once baked, remove the casserole from the oven and let it cool for a few minutes before serving. This resting time helps it set for perfect serving portions.
