Description

This Slow Cooker Three Envelope Pot Roast is a comforting and easy-to-make main course featuring a tender chuck roast cooked low and slow with flavorful ranch, Italian dressing, and brown gravy mix. The simple preparation and rich taste make it perfect for a family meal, served alongside mashed potatoes, roasted vegetables, or egg noodles.

Ingredients

Scale

Meat

  • 3 to 4 pounds chuck roast

Seasonings and Mixes

  • 1 packet ranch dressing mix
  • 1 packet Italian dressing mix
  • 1 packet brown gravy mix
  • Salt and pepper to taste

Liquids and Oils

  • 1/2 cup water
  • 1 tablespoon olive oil (optional for searing)

Instructions

  1. Season and Sear (Optional): Season the chuck roast generously with salt and pepper. Heat the olive oil in a skillet over medium-high heat and sear the roast for 2–3 minutes on each side until browned. This step enhances the flavor but can be skipped for convenience.
  2. Prepare Slow Cooker: Place the seared or raw roast into the slow cooker insert.
  3. Mix the Seasonings: In a small bowl, whisk together ranch dressing mix, Italian dressing mix, brown gravy mix, and water until smooth and well combined.
  4. Combine and Cook: Pour the seasoning mixture evenly over the roast in the slow cooker. Cover with the lid.
  5. Cook Low and Slow: Set the slow cooker to low and cook for 8 hours, or alternatively on high for 4–5 hours, until the meat is tender enough to easily shred with a fork.
  6. Serve: Remove the roast from the slow cooker, shred or slice it as desired, and serve with mashed potatoes, roasted vegetables, or over egg noodles for a complete meal.

Notes

  • Searing the roast is optional but adds extra depth of flavor and a richer color.
  • For a complete one-pot meal, add vegetables like carrots, potatoes, or onions to the slow cooker with the roast.
  • Leftover pot roast works wonderfully for sandwiches, tacos, or as a protein addition to salads.
