Description

A hearty and creamy Slow Cooker Amish Corn Chowder featuring tender corn, potatoes, and a touch of bacon, slow-cooked to perfection for a comforting and flavorful meal.

Ingredients

Scale

Main Ingredients

  • 4 cups frozen or fresh corn kernels
  • 2 medium potatoes, peeled and diced
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 celery stalk, chopped
  • 1 carrot, chopped
  • 4 cups chicken broth
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ¼ teaspoon dried thyme

For Creaminess and Garnish

  • 1 cup heavy cream
  • 2 tablespoons butter
  • 1 tablespoon all-purpose flour
  • ½ cup chopped cooked bacon (optional)
  • Chopped fresh parsley for garnish

Instructions

  1. Combine Ingredients in Slow Cooker: In your slow cooker, add corn kernels, diced potatoes, chopped onion, minced garlic, chopped celery, chopped carrot, chicken broth, salt, pepper, and dried thyme. Stir to combine.
  2. Slow Cook: Cover the slow cooker and cook on low for 6 to 7 hours or on high for 3 to 4 hours until all vegetables are tender and flavors meld together.
  3. Prepare Cream Mixture: About 30 minutes before serving, melt butter in a small saucepan over medium heat. Stir in the flour and cook for 1 minute to form a roux.
  4. Add Heavy Cream: Slowly whisk in the heavy cream to create a smooth, creamy mixture, ensuring no lumps remain.
  5. Combine Cream Mixture with Chowder: Pour the cream mixture into the slow cooker. Add chopped bacon if using and stir well to incorporate all ingredients.
  6. Thicken Chowder: Cover and cook on high for an additional 20 to 30 minutes until the chowder thickens to desired consistency.
  7. Serve: Ladle the chowder into bowls, garnish with fresh chopped parsley, and serve warm.

Notes

  • For a vegetarian version, substitute chicken broth with vegetable broth and omit the bacon.
  • For a creamier texture, partially blend the chowder using an immersion blender before adding the cream mixture.
  • Use gluten-free flour to make this chowder gluten-free.
  • Adjust salt and pepper to taste depending on broth sodium content and personal preference.
