For the Fruit Filling
- 500g sliced peaches (fresh or frozen)
- 200g raspberries
- 2 tbsp caster sugar
- 1 tsp vanilla extract
- 1 tbsp cornflour (cornstarch)
For the Cobbler Topping
- 200g plain flour
- 100g caster sugar
- 1½ tsp baking powder
- ½ tsp baking soda
- Pinch of salt
- 75g cold unsalted butter, cubed
- 180ml buttermilk
- Demerara sugar (for sprinkling)
Instructions
- Preheat & Prep Fruit: Preheat oven to 180°C (350°F). Toss peaches and raspberries with caster sugar, vanilla extract, and cornflour until evenly coated. Pour this fruit mixture into a greased baking dish, spreading out evenly.
- Make Topping: In a bowl, combine plain flour, caster sugar, baking powder, baking soda, and a pinch of salt. Cut in the cold unsalted butter with your fingers or a pastry cutter until the mixture becomes crumbly. Stir in the buttermilk until just combined, being careful not to overmix.
- Assemble & Bake: Drop spoonfuls of the cobbler batter evenly over the fruit filling. Sprinkle the surface with Demerara sugar for added crunch and sweetness. Bake in the preheated oven for 35 to 40 minutes, or until the topping is golden brown and the fruit is bubbling around the edges.
- Serve Warm: Allow the cobbler to cool slightly after baking. Serve warm, ideally accompanied by whipped cream or a scoop of vanilla ice cream for the ultimate comforting dessert experience.
Notes
- Use fresh peaches when in season for best flavor; frozen peaches work well too.
- If you do not have buttermilk, you can substitute with milk plus 1 tablespoon lemon juice or vinegar.
