For the Shrimp:
- 1 pound medium shrimp (peeled and deveined)
- 1 tablespoon olive oil
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon garlic powder
- 1/4 teaspoon salt
- juice of 1 lime
For the Slaw:
- 2 cups shredded cabbage
- 1/4 cup chopped cilantro
- 1/4 cup plain Greek yogurt or sour cream
- 1 tablespoon lime juice
- 1/2 teaspoon honey
- salt and pepper to taste
To Serve:
- 8 small corn or flour tortillas
- sliced avocado
- extra lime wedges
- hot sauce (optional)
Instructions
- Marinate the Shrimp: In a bowl, toss the shrimp with olive oil, chili powder, cumin, paprika, garlic powder, salt, and lime juice. Let it marinate for 10–15 minutes.
- Prepare the Slaw: In another bowl, combine shredded cabbage, cilantro, Greek yogurt, lime juice, honey, salt, and pepper. Refrigerate until ready to use.
- Cook the Shrimp: Heat a skillet over medium-high heat. Cook the shrimp for 2–3 minutes per side until pink and opaque.
- Assemble the Tacos: Warm tortillas. Layer slaw, shrimp, and avocado slices in each tortilla. Add lime juice and hot sauce if desired. Serve immediately.
Notes
- For a spicy kick, add jalapeño to the slaw or use chipotle chili powder.
- Grilled shrimp can also be used for a smoky flavor.
