Potatoes:

  • 2 pounds russet potatoes, peeled and thinly sliced
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Cheese Layer:

  • 1 cup shredded mozzarella cheese
  • 1 cup shredded cheddar cheese
  • 1/4 cup grated Parmesan cheese

Spinach Filling:

  • 1 tablespoon butter
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 1 cup fresh spinach, chopped
  • 1/2 cup sour cream
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon paprika
  • 1/2 cup cooked and crumbled bacon (optional)
  • Chopped fresh parsley for garnish

Instructions

  1. Preheat the Oven: Preheat the oven to 375°F (190°C) and prepare a baking sheet with parchment paper.
  2. Prepare Potatoes: Arrange sliced potatoes on the baking sheet, brush with olive oil, season with salt and pepper, and bake until tender and golden.
  3. Make Spinach Filling: Sauté onion in butter, add garlic, spinach, thyme, and paprika. Stir in sour cream.
  4. Assemble: Layer cheeses on potatoes, spread spinach mixture, sprinkle with bacon, roll the potato sheet, and bake until melted.
  5. Serve: Let cool, slice, and garnish with parsley.

Notes

  • You can prepare the filling ahead of time to save time.
  • Feel free to swap in kale or sautéed mushrooms for the spinach for variety.
  • To make it vegetarian, omit the bacon or substitute with a meat alternative.
