Ingredients
Scale
Vegetables and Herbs
- 1 rib Celery, chopped
- 1 small Onion, chopped
- 1/4 cup Fresh parsley, minced
Dairy and Eggs
- 1/2 cup Butter, cubed
- 1 large Egg, beaten
Dry Ingredients and Seasonings
- 3 cups Day-old bread, cubed
- 1 teaspoon Poultry seasoning
- 1 teaspoon Rubbed sage
- 1/2 teaspoon Pepper
Liquids and Seafood
- 1 cup Chicken broth
- 1 cup Shucked oysters, drained and coarsely chopped
Instructions
- Sauté Aromatics: Melt the butter in a skillet over medium heat until foamy. Add the chopped celery and onion and sauté for about 4-5 minutes until they become soft and fragrant.
- Add Seasonings: Stir in the minced parsley, poultry seasoning, rubbed sage, and pepper. Cook for another minute to let the flavors meld together.
- Combine with Bread: In a large bowl, mix the sautéed vegetable and herb mixture with the cubed day-old bread, distributing evenly.
- Add Egg and Broth: Pour the beaten egg and chicken broth into the bread mixture and mix until everything is well combined and moistened.
- Fold in Oysters: Gently fold in the coarsely chopped oysters, making sure they are evenly incorporated throughout the mixture.
- Bake: Transfer the dressing mixture into a greased baking dish. Bake in a preheated oven at 350°F (175°C) for 30-40 minutes until the top is golden brown and the dressing is heated through.
Notes
- Using day-old bread helps the dressing absorb moisture without becoming too mushy.
- Make sure to drain oysters well to prevent excess moisture in the dressing.
- You can prepare this dressing a day ahead and refrigerate before baking for convenience.
- For a richer flavor, consider adding a splash of oyster liquor to the mixture if available.
- Adjust herbs and seasoning to your taste preferences.
