This recipe enhances plain rice with rich, savory notes and a touch of fresh parsley, making it a perfect accompaniment to a variety of main courses.
Ingredients
Scale
Rice
- 1 cup jasmine rice
- 2 cups water or broth
- 1 teaspoon salt (adjust to taste)
Onions and Butter
- 2 large yellow onions, thinly sliced
- 3 tablespoons butter (divided)
- 2 tablespoons olive oil
Seasonings and Garnish
- ½ teaspoon black pepper
- 1 tablespoon fresh parsley, chopped
Instructions
- Rinse the Rice: Rinse the jasmine rice under cold water until the water runs clear to remove excess starch, ensuring the rice cooks up fluffy.
- Caramelize the Onions: In a skillet over medium-low heat, melt 2 tablespoons of butter with 2 tablespoons of olive oil. Add the thinly sliced onions and cook slowly, stirring occasionally, for 20–25 minutes until they are deep golden and caramelized.
- Cook the Rice: While the onions cook, bring 2 cups of water or broth to a boil in a saucepan. Add the rinsed rice and salt. Cover, reduce the heat to a simmer, and cook for 15–18 minutes until the liquid is absorbed and the rice is fluffy.
- Combine Rice and Onions: Fluff the cooked rice with a fork. Add the caramelized onions and the remaining 1 tablespoon of butter. Gently fold the mixture to combine well. Season with black pepper and adjust salt as needed.
- Garnish and Serve: Sprinkle the chopped fresh parsley over the rice before serving to add a burst of color and fresh flavor.
Notes
- Use broth instead of water for extra flavor
- Cook onions slowly to properly caramelize and avoid burning
- Adjust salt and pepper to taste depending on dietary preference
- For a richer taste, use all butter instead of mixing with olive oil
- Serve alongside grilled meats or roasted vegetables for a complete meal
