Instructions

  1. Gather ingredients: Collect canned chickpeas, onions, garlic, olive oil, lemon juice, tahini, salt, cumin, and parsley to prepare for the recipe.
  2. Slice and sauté onions: Thinly slice the onions. Heat 2 tablespoons of olive oil in a skillet over medium-low heat, add the sliced onions and a pinch of salt.
  3. Caramelise onions: Cook the onions slowly for 20-30 minutes, stirring occasionally until they are golden brown and soft, being careful to prevent burning.
  4. Prepare chickpeas: Drain and rinse canned chickpeas thoroughly under cold water to remove excess sodium and canning liquid.
  5. Cool onions: Let the caramelised onions cool slightly. Reserve some onions for garnish if desired.
  6. Combine ingredients: In a food processor, add chickpeas, caramelised onions, minced garlic, tahini, lemon juice, ground cumin, and salt.
