Ingredients
Scale
Vegetables
- 1 medium onion, thinly sliced
- 1 bell pepper, thinly sliced
- 2 cloves garlic, minced
Meat
- 8 oz steak (ribeye or sirloin), sliced thinly
Dairy
- 4 slices provolone cheese
Other
- 2 tablespoons olive oil
- Salt, to taste
- Black pepper, to taste
- Toothpicks (optional, to secure roll ups)
Instructions
- Prep the ingredients: Slice your onion, bell pepper, and steak as thinly as possible. Preheat your skillet over medium-high heat with olive oil.
- Cook the vegetables: Sauté the onion and bell pepper in the skillet for 5–7 minutes until they are soft and slightly caramelized. Add the minced garlic and cook for an additional minute. Remove the cooked vegetables from the skillet and set aside.
- Cook the steak: In the same skillet, add a bit more olive oil if needed. Sear the thinly sliced steak quickly, about 1–2 minutes per side, until just cooked through. Season with salt and black pepper to taste.
- Assemble the roll ups: Lay each slice of provolone cheese on a clean surface. Add a portion of the cooked steak and sautéed vegetables on top of each slice. Gently roll them up, securing with a toothpick if necessary to hold the shape.
- Optional finishing: For extra meltiness, place the roll ups on a parchment-lined baking sheet and broil in the oven for 2–3 minutes until the cheese becomes bubbly and slightly golden.
- Serve hot: Serve the roll ups warm with your favorite low-carb dipping sauce or enjoy them plain as a satisfying and flavorful keto snack or appetizer.
Notes
- Make sure to slice the steak, onion, and bell pepper as thinly as possible for quick cooking and easy rolling.
- Use provolone cheese for an authentic Philly cheesesteak flavor, but mozzarella or other mild cheeses work as well.
- Broiling is optional but helps to give the cheese a nice bubbly finish.
- These roll ups can be stored in the refrigerator and reheated quickly in a skillet or oven.
- For extra flavor, consider adding a dash of Worcestershire sauce or hot sauce to the steak while cooking.
