- 2 cups broccoli florets

Instructions
- Brown the Sausage: In a large skillet over medium heat, heat 1 tablespoon olive oil. Add the sliced sausage and cook until browned, about 4–5 minutes. Remove from the skillet and set aside.
- Cook Potatoes: Add the remaining tablespoon of olive oil and the halved baby potatoes to the same skillet. Cook, stirring occasionally, for 10–12 minutes until the potatoes are golden and nearly tender.
- Sauté Onion: Add the chopped onion to the skillet and cook for 2–3 minutes until softened.
- Add Seasonings and Garlic: Stir in the minced garlic, paprika, dried thyme, salt, and black pepper to the skillet, mixing well with the onions and potatoes.
- Steam Broccoli: Add the broccoli florets along with 2–3 tablespoons of water. Cover the skillet and steam for 3–4 minutes until the broccoli is bright green and tender.
- Combine and Heat Through: Return the browned sausage to the skillet. Toss everything together and cook for another 2–3 minutes to heat through.
- Finish and Garnish: Sprinkle the Parmesan cheese over the skillet and garnish with chopped fresh parsley before serving.

- To speed up cooking, microwave the baby potatoes for 3–4 minutes before starting.
