Instructions

  1. Brown the Sausage: In a large skillet over medium heat, heat 1 tablespoon olive oil. Add the sliced sausage and cook until browned, about 4–5 minutes. Remove from the skillet and set aside.
  2. Cook Potatoes: Add the remaining tablespoon of olive oil and the halved baby potatoes to the same skillet. Cook, stirring occasionally, for 10–12 minutes until the potatoes are golden and nearly tender.
  3. Sauté Onion: Add the chopped onion to the skillet and cook for 2–3 minutes until softened.
  4. Add Seasonings and Garlic: Stir in the minced garlic, paprika, dried thyme, salt, and black pepper to the skillet, mixing well with the onions and potatoes.
  5. Steam Broccoli: Add the broccoli florets along with 2–3 tablespoons of water. Cover the skillet and steam for 3–4 minutes until the broccoli is bright green and tender.
  6. Combine and Heat Through: Return the browned sausage to the skillet. Toss everything together and cook for another 2–3 minutes to heat through.
  7. Finish and Garnish: Sprinkle the Parmesan cheese over the skillet and garnish with chopped fresh parsley before serving.

Notes

  • To speed up cooking, microwave the baby potatoes for 3–4 minutes before starting.
  • Add red pepper flakes if you prefer a spicy kick.
  • Swap broccoli for green beans or zucchini for a different vegetable variation.
