For the Beef Patties

  • 1 lb ground beef (90% lean)
  • 1/2 onion (finely diced)
  • 2 garlic cloves (minced)
  • 1/3 cup panko bread crumbs
  • 1 large egg
  • 1 ½ tsp Worcestershire sauce
  • 2 tsp mayonnaise
  • 1 tsp sea salt
  • ½ tsp black pepper
  • 1 ½ tsp Italian seasoning
  • 1 Tbsp ketchup
  • 1 ½ tsp milk (whole milk or any kind)
  • 2 tsp Dijon mustard

For Cooking Patties

  • 1 Tbsp olive oil (to sauté)

For Mushroom Gravy

  • ½ yellow onion (finely diced)
  • 1 Tbsp unsalted butter
  • 8 oz brown mushrooms (sliced)
  • 2 garlic cloves (minced)
  • 2 Tbsp all-purpose flour
  • 1 ½ cup beef broth
  • ½ cup water
  • ½ tsp Worcestershire sauce
  • ½ tsp Dijon mustard
  • 2 tsp ketchup
  • ¼ tsp sea salt

Instructions

  1. Prepare the beef patties: In a bowl, combine all ingredients for the beef patties except the oil. Mix well to incorporate evenly. Shape the mixture into 4 oval or round patties and flatten the centers for even thickness.
  2. Cook the patties: Heat 1 tablespoon of olive oil in a non-stick skillet over medium-high heat. Once hot, add the patties and cook until they are golden brown on both sides and fully cooked through (about 4-5 minutes per side). Remove the patties from the skillet and cover them to keep warm.
  3. Sauté onions and garlic: In the same skillet, add the diced half onion and cook until tender. Add the minced garlic and butter, stirring to combine and cook for another minute until fragrant.
  4. Cook mushrooms: Add the sliced brown mushrooms to the skillet and sauté until browned and tender, stirring frequently. Season lightly with salt and pepper.
  5. Make the gravy: In a separate bowl, whisk together the flour, beef broth, water, Worcestershire sauce, Dijon mustard, ketchup, salt, and pepper. Pour this mixture into the skillet with the mushrooms and stir continuously until the gravy thickens and becomes smooth.
  6. Combine patties with gravy: Return the cooked beef patties to the skillet. Completely cover them with the mushroom gravy and cook for a few more minutes until the patties are heated through and the flavors meld.

Notes

  • Use 90% lean ground beef for the best balance of moisture and flavor.
  • You can substitute panko bread crumbs with regular bread crumbs if unavailable.
  • Feel free to customize the seasoning to taste, such as adding a pinch of smoked paprika or fresh herbs.
