Description

Rotel Rice is a flavorful and easy-to-make side dish featuring long-grain white rice cooked with zesty Rotel tomatoes and green chilies. This vibrant, mildly spicy rice dish is perfect for pairing with Mexican and Tex-Mex meals or enjoying as a standalone comfort food. Ready in just 25 minutes, it combines simple pantry ingredients for a deliciously tangy and savory rice that everyone will love.

Ingredients

Scale

Rice Base

  • 1 cup long-grain white rice
  • 1 tablespoon olive oil or butter

Flavorings and Liquids

  • 1 can Rotel tomatoes with green chilies (10 oz), undrained
  • 1 ½ cups chicken or vegetable broth
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • Salt and pepper to taste

Garnish (Optional)

  • Fresh cilantro, chopped

Instructions

  1. Toast the Rice: In a medium saucepan, heat olive oil or butter over medium heat. Add the rice and sauté for 1-2 minutes until it turns lightly golden, enhancing its flavor.
  2. Combine Ingredients: Add the undrained Rotel tomatoes and chicken or vegetable broth to the toasted rice. Stir in garlic powder, onion powder, salt, and pepper, mixing all ingredients evenly.
  3. Cook the Rice: Bring the mixture to a boil, then immediately reduce the heat to low. Cover the saucepan tightly and let it simmer gently for 15-18 minutes, or until the rice is tender and all the liquid has been absorbed.
  4. Fluff and Serve: Remove the saucepan from heat and let the rice rest for 5 minutes. Then, fluff it with a fork to separate the grains. Garnish with chopped fresh cilantro if desired, and serve warm.

Notes

  • Use chicken broth for a richer flavor or vegetable broth to keep it vegetarian-friendly.
  • Adjust salt and pepper according to your taste preference, especially since Rotel tomatoes can be slightly salty.
  • For a spicier dish, add a pinch of cayenne pepper or use spicy Rotel varieties.
  • This dish pairs excellently with grilled meats, tacos, or as a standalone side.
  • Leftovers keep well refrigerated for up to 3 days and reheat nicely in the microwave or on the stovetop with a splash of broth or water.
