Description

Potatoes & Seasoning

  • 1½ lbs baby potatoes, halved
  • 5 garlic cloves, minced
  • 1 teaspoon dried oregano
  • ½ teaspoon crushed red pepper flakes (optional)
  • Salt and black pepper to taste

Cheese & Oils

  • 8 oz block of feta cheese
  • 4 tablespoons olive oil (divided)
  • 1 tablespoon fresh lemon juice

Garnish

  • Chopped fresh parsley for garnish


Instructions

  1. Preheat the Oven: Set your oven to 400°F (200°C) to prepare for roasting the potatoes and baking the feta.
  2. Season the Potatoes: In a large bowl, toss the halved baby potatoes with 2 tablespoons of olive oil, minced garlic, dried oregano, optional crushed red pepper flakes, and salt and black pepper to taste. Ensure all potatoes are evenly coated with the seasoning.
  3. Arrange on Baking Dish: Spread the seasoned potatoes out on a large baking sheet or oven-safe dish in a single layer for even roasting. Nestle the whole block of feta cheese in the center of the dish, surrounded by the potatoes.
  4. Add Remaining Olive Oil: Drizzle the remaining 2 tablespoons of olive oil all over the potatoes and the feta cheese to add richness and help in roasting.
  5. Roast: Place the baking dish in the oven and roast for 30 to 35 minutes, or until the potatoes turn golden brown, are fork-tender, and the feta becomes soft with slightly browned edges.
  6. Creamy Feta Texture: Remove from the oven and gently mash the feta block with a spoon to create a creamy consistency that will coat the potatoes.
  7. Add Lemon and Toss: Drizzle fresh lemon juice over the potatoes and feta, then lightly toss everything together to blend the flavors.
  8. Garnish and Serve: Sprinkle chopped fresh parsley on top for a bright, fresh finish. Serve warm as a delicious side dish.

Notes

  • For extra crispiness, broil the dish for the last 2–3 minutes of cooking time.
  • If a block of feta isn’t available, crumbled feta can be used, but it may melt faster.
