Chicken and Marinade
- 2 lbs boneless, skinless chicken breasts, cut into 1 1/2-inch cubes
- 1/2 cup grated parmesan cheese, divided
- 2 tbsp olive oil
- 2 tbsp ranch seasoning mix
- 1 tbsp garlic powder
- 1/2 tsp black pepper
- 1/2 tsp salt (optional, to taste)
Garnish
- 2 tbsp chopped fresh parsley (optional)

Instructions
- Prepare skewers: If using wooden skewers, soak them in water for at least 30 minutes beforehand to prevent burning during cooking.
- Cut chicken: Trim and cut the chicken breasts into approximately 1 1/2-inch cubes and place them into a large mixing bowl.
- Marinate chicken: Add olive oil, ranch seasoning mix, garlic powder, black pepper, salt (if using), and half of the grated parmesan cheese to the bowl with chicken. Toss thoroughly to evenly coat all pieces with the marinade and seasonings.
- Skewer chicken: Thread the marinated chicken cubes onto the skewers, leaving a little space between pieces to allow even cooking.
- Cook chicken: Preheat your grill or oven to 400°F (200°C). Cook the skewers either by grilling or baking for 12 to 15 minutes, turning the skewers once halfway through cooking. Use a meat thermometer to ensure the internal temperature reaches 165°F (75°C) indicating the chicken is fully cooked.
- Finish and serve: Remove the skewers from heat, sprinkle the remaining parmesan cheese over the hot chicken, garnish with chopped fresh parsley if desired, and serve immediately for best flavor and texture.
