Description

Delight in the comforting flavors of Pumpkin Spinach Lasagna Roll-Ups, a creative twist on traditional lasagna. These roll-ups feature tender lasagna noodles filled with a creamy blend of pumpkin puree, fresh spinach, and ricotta cheese, layered with marinara sauce and melty mozzarella and Parmesan. Baked to golden bubbly perfection, this dish is perfect for a cozy family meal or impressive dinner party entrée.

Ingredients

Scale

Lasagna Roll-Ups

  • 12 sheets lasagna noodles
  • 1 cup pumpkin puree (canned or homemade)
  • 2 cups fresh spinach, chopped
  • 1 cup ricotta cheese
  • 2 cups mozzarella cheese, shredded (divided)
  • 1/2 cup Parmesan cheese, grated (plus extra for garnish)
  • 2 cloves garlic, minced
  • 1/4 teaspoon nutmeg
  • 1 tablespoon olive oil
  • 2 cups marinara sauce
  • Salt and pepper, to taste

Instructions

  1. Cook the noodles: Boil the lasagna noodles in salted water until they are al dente, which usually takes about 8-10 minutes. Drain the noodles carefully and lay them flat on a clean towel to prevent sticking while you prepare the filling.
  2. Prepare the filling: In a large bowl, combine pumpkin puree, chopped fresh spinach, ricotta cheese, half of the shredded mozzarella, minced garlic, nutmeg, and season with salt and pepper to taste. Mix thoroughly until all ingredients are well incorporated.
  3. Assemble the roll-ups: Spread a thin layer of marinara sauce on the bottom of a baking dish. Take each cooked lasagna noodle and evenly spread the pumpkin and spinach mixture over it. Carefully roll up each noodle and place them seam-side down in the prepared baking dish.
  4. Add sauce and cheese: Pour the remaining marinara sauce evenly over the arranged roll-ups. Sprinkle the remaining shredded mozzarella and grated Parmesan cheese generously over the top to create a luscious cheesy crust.
  5. Bake the roll-ups: Cover the baking dish with aluminum foil and bake in a preheated oven at 375°F (190°C) for 25 minutes. Then remove the foil and bake for an additional 15-20 minutes until the cheese on top is melted, bubbly, and golden brown.

Notes

  • For a smoother pumpkin puree, use homemade puree cooked and blended from fresh pumpkins for extra flavor.
  • Feel free to substitute spinach with other leafy greens like kale or Swiss chard.
  • If you prefer a bit of spice, add red pepper flakes to the filling mixture.
  • Make sure to grease your baking dish lightly if your marinara sauce is very thin to prevent sticking.
  • Let the roll-ups rest for 5-10 minutes after baking for easier serving.
