Potatoes and Boiling

  • 1 ½ lbs baby potatoes, halved
  • 1 teaspoon salt (for boiling water)

Bacon and Vegetables

  • 4 oz bacon, chopped
  • 1 yellow onion, diced
  • 12 oz frozen cut green beans

Seasoning

  • 1 teaspoon everything bagel seasoning
  • Salt and pepper to taste


Instructions

  1. Boil Potatoes: Slice the potatoes in half and place them in a large pot. Cover with water and add 1 teaspoon of salt. Cover the pot and bring the water to a boil over high heat. Once boiling, reduce the heat to medium-high and allow the potatoes to continue boiling until they are fork-tender, about 7-8 minutes. Drain the potatoes in a colander.
  2. Cook Bacon: While the potatoes are boiling, heat a large skillet over medium heat. Add the chopped bacon and cook until it is brown and crispy. Remove the bacon from the skillet, leaving the bacon fat in the skillet for flavor. Drain off excess fat if necessary, ensuring about 2 tablespoons remain.
  3. Sauté Onions: In the same skillet with the bacon fat, add the diced onion. Cook over medium heat until the onion is soft and slightly browned, stirring occasionally.
  4. Cook Potatoes: Add the drained potatoes to the skillet with the onions. Stir briefly to coat the potatoes in the bacon fat. Let the potatoes cook undisturbed for a few minutes, stirring only occasionally to develop a golden-brown crust on the bottom.
  5. Add Green Beans: Once the potatoes have browned, add the frozen green beans directly into the skillet (no need to thaw). Stir and continue cooking until the green beans are heated through.
  6. Add Bacon and Seasoning: Chop the cooked bacon if not already done so, then add it back to the skillet along with the everything bagel seasoning. Stir everything to combine well. Taste and adjust seasoning with salt, pepper, or additional bagel seasoning if desired. Serve hot and enjoy!
