  • 3 tablespoons melted unsalted butter
  • 2 tablespoons granulated sugar
  • 1/4 teaspoon salt

For the filling:

  • 3 (8-ounce) packages cream cheese, softened
  • 1 cup granulated sugar
  • 1/4 cup sour cream
  • 1/2 cup pistachio paste
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon almond extract
  • pinch of salt

Optional topping: chopped pistachios and whipped cream.


Instructions

  1. Preheat the oven: Preheat the oven to 325°F (160°C).
  2. Prepare the crust: Mix almond flour, melted butter, sugar, and salt. Press into a springform pan and bake.
  3. Make the filling: Beat cream cheese until smooth, add sugar, sour cream, pistachio paste, extracts, and salt. Mix in eggs one at a time.
  4. Bake: Pour filling over crust and bake for 50–60 minutes. Let cool in the oven.
  5. Chill: Refrigerate for at least 4 hours. Top with pistachios and whipped cream before serving.
