Jalapeños:

  • pounds fresh jalapeños (sliced into ¼-inch rings)

Pineapple Mixture:

  • 1 cup crushed pineapple (with juice)
  • 2 cups granulated sugar
  • 1 cup apple cider vinegar
  • ½ teaspoon ground turmeric
  • ½ teaspoon ground ginger
  • ¼ teaspoon garlic powder
  • pinch of salt

Instructions

  1. Prepare Sugar Mixture: In a large saucepan, combine sugar, apple cider vinegar, turmeric, ginger, garlic powder, and salt. Simmer over medium heat until sugar dissolves.
  2. Add Pineapple: Stir in crushed pineapple, simmer for 5 minutes.
  3. Simmer Jalapeños: Add jalapeño rings, simmer for 5–7 minutes until slightly softened.
  4. Jar the Candy: Transfer jalapeños and pineapple to jars. Pour hot syrup over, leaving some space at the top.
  5. Seal and Store: Seal jars, cool, refrigerate for 24 hours before use. For longer storage, process in a water bath canner for 10 minutes.

  • For extra heat, leave jalapeño seeds in.
