- 2-3 tablespoons cold water

- 1/4 cup (60 ml) light corn syrup
- 1/4 cup (50 g) brown sugar, packed
- 1 tablespoon unsalted butter, melted
- 1 teaspoon vanilla extract
- 1/2 cup (60 g) chopped pecans
Instructions
- Prepare Oven and Pan: Preheat the oven to 350°F (175°C) and lightly grease a mini muffin tin to prevent sticking.
- Make Crust Mixture: In a medium bowl, combine the all-purpose flour, granulated sugar, and cold cubed butter. Use a pastry cutter or your fingers to mix until the texture forms coarse crumbs, ensuring the butter is well incorporated for flakiness.
- Form Dough: Add cold water one tablespoon at a time into the mixture, gently mixing until the dough just comes together. Avoid overmixing to keep the crust tender and flaky.
- Roll Out Dough: On a floured surface, roll the dough out to about 1/8-inch thickness. Use a round cutter or the rim of a glass to cut circles slightly larger than the mini muffin tin openings to form the crust bases.
- Line Muffin Tin: Press each dough circle into the prepared mini muffin tin cups, forming a crust and ensuring the dough covers the base and sides evenly.
- Prepare Filling: In a small bowl, whisk together the egg, light corn syrup, brown sugar, melted butter, and vanilla extract until smooth and combined to create the rich filling.
- Add Pecans and Filling: Place about 1 teaspoon of chopped pecans into each crust, then spoon approximately 1 tablespoon of the filling mixture on top, ensuring the pecans are well covered.
- Bake: Bake in the preheated oven for 20-25 minutes or until the filling is set and the crust turns golden brown, indicating doneness.
