  • 1 tablespoon unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1/2 cup (60 g) chopped pecans


Instructions

  1. Prepare Oven and Pan: Preheat the oven to 350°F (175°C) and lightly grease a mini muffin tin to prevent sticking.
  2. Make Crust Mixture: In a medium bowl, combine the all-purpose flour, granulated sugar, and cold cubed butter. Use a pastry cutter or your fingers to mix until the texture forms coarse crumbs, ensuring the butter is well incorporated for flakiness.
  3. Form Dough: Add cold water one tablespoon at a time into the mixture, gently mixing until the dough just comes together. Avoid overmixing to keep the crust tender and flaky.
  4. Roll Out Dough: On a floured surface, roll the dough out to about 1/8-inch thickness. Use a round cutter or the rim of a glass to cut circles slightly larger than the mini muffin tin openings to form the crust bases.

  6. Prepare Filling: In a small bowl, whisk together the egg, light corn syrup, brown sugar, melted butter, and vanilla extract until smooth and combined to create the rich filling.
