For the Crust:
- 2 cups all-purpose flour
- 1/2 cup powdered sugar
- 1/4 teaspoon salt
- 1 cup unsalted butter, cold and cut into cubes
For the Filling:
- 3 large eggs
- 1 cup light corn syrup
- 1 cup packed light brown sugar
- 2 tablespoons unsalted butter, melted
- 1 1/2 teaspoons vanilla extract
- 1/4 teaspoon salt
- 2 cups chopped pecans
Instructions
- Preheat and prepare pan: Preheat the oven to 350°F (175°C). Line a 9×13-inch baking dish with parchment paper, leaving a slight overhang for easy removal.
- Make the crust: In a large bowl, whisk together the flour, powdered sugar, and salt. Cut in the cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs. Press the mixture evenly into the bottom of the prepared pan. Bake for 18–20 minutes or until the edges are lightly golden.
- Prepare the filling: In a medium bowl, whisk together the eggs, corn syrup, brown sugar, melted butter, vanilla, and salt until smooth. Stir in the chopped pecans.
- Assemble and bake: Pour the filling over the hot crust and spread evenly. Return the pan to the oven and bake for 30–35 minutes, or until the filling is set and golden brown.
- Cool and serve: Remove from oven and allow to cool completely in the pan. Once cooled, lift out using the parchment overhang and cut into bars.
Notes
- Store pecan bars in an airtight container at room temperature for up to 3 days or refrigerate for up to a week.
- For a twist, add a splash of bourbon or sprinkle flaky sea salt on top before baking for added flavor complexity.
