Description

These Peanut Butter Rice Krispie Treats combine the classic crispy, gooey texture of traditional Rice Krispies with a rich peanut butter flavor and a smooth chocolate topping. A quick and easy no-bake dessert perfect for sharing at parties or enjoying as a sweet snack.

Ingredients

Scale

Main Ingredients

  • 4 Tbsp. salted butter
  • 10 oz. mini marshmallows (reserve 1 cup)
  • ¾ cup smooth and creamy peanut butter
  • 1 tsp. vanilla extract
  • ½ tsp. salt
  • 5 cups Rice Krispies or crispy rice cereal
  • 8 ounces milk or semi-sweet chocolate chips

Instructions

  1. Browning the Butter: Add the butter to a large pot or Dutch oven over medium heat. Cook it while stirring occasionally for a few minutes until the butter bubbles, foams, and then turns a light brown with a slightly nutty aroma. Stir constantly for the last minute to prevent burning.
  2. Melting Marshmallows with Peanut Butter: Reduce heat to low and add peanut butter, vanilla extract, and salt. Stir to combine, then mix in the marshmallows until they are coated in the peanut butter. Continue stirring until marshmallows puff up and the mixture becomes nearly smooth, leaving a few marshmallow bits if unmelted. Remove from heat.
  3. Mixing in Cereal: Add Rice Krispies cereal to the peanut butter marshmallow mixture. Stir thoroughly with a spatula until all cereal is coated. Then fold in the reserved mini marshmallows to add extra texture.
  4. Shaping the Treats: Transfer the mixture into a 9×9-inch baking pan lined with parchment or wax paper. Press down firmly using a spatula to create an even layer. Let it cool for 5-10 minutes.
  5. Adding the Chocolate Topping: Melt the chocolate chips separately then pour the melted chocolate over the cooled cereal layer. Smooth the chocolate evenly with a spatula.
  6. Setting and Serving: Allow the chocolate topping to harden at room temperature for 1-2 hours or refrigerate for 20-30 minutes. Once firm, slice into squares and serve. Enjoy your delicious Peanut Butter Rice Krispie Treats!

Notes

  • Use salted butter to enhance the overall flavor profile.
  • Reserving some marshmallows and adding them later gives a fun chewy contrast.
  • Substitute your preferred type of chocolate chips (milk or semi-sweet) based on taste preference.
  • Pressing the mixture firmly into the pan helps the treats hold their shape better.
  • Keep refrigerated leftovers in an airtight container for up to 3 days.
