  • 1 cup natural creamy peanut butter
  • 1/2 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 1/2 cups rolled oats
  • 1/2 cup vanilla or chocolate protein powder
  • 1/4 cup ground flaxseed or chia seeds
  • 1/4 cup mini chocolate chips (optional)


Instructions

  1. Prepare the Peanut Butter Mixture: In a medium saucepan over low heat, combine the peanut butter and honey. Stir until smooth and warmed through. Remove from heat and stir in the vanilla extract and salt.
  2. Mix in the Dry Ingredients: Add the oats, protein powder, and flaxseed (or chia seeds), stirring until fully combined. Let the mixture cool slightly, then fold in the mini chocolate chips if using.
  3. Form and Chill the Bars: Line an 8×8-inch pan with parchment paper. Press the mixture firmly and evenly into the pan using a spatula or clean hands. Refrigerate for at least 1 hour or until firm.
  4. Slice and Store: Once set, remove from the pan and slice into 10 bars. Store in an airtight container in the refrigerator for up to 1 week.
