Instructions
- Thaw Puff Pastry and Soften Cream Cheese: Leave the puff pastry at room temperature for 30–40 minutes until thawed and pliable. Allow the dairy-free cream cheese to soften for about 30 minutes to ensure it mixes smoothly.
- Preheat Oven: Set your oven to 400ºF (204ºC) and prepare a baking sheet by lining it with parchment paper to prevent sticking and promote even baking.
- Prepare Cream Cheese Mixture: In a mixing bowl, beat the softened dairy-free cream cheese with 1 to 2 tablespoons of light agave nectar (or your preferred sweetener) and 1 1/2 teaspoons of pure vanilla extract until the mixture becomes smooth and creamy.
- Roll Out Puff Pastry: On a clean surface, roll out the puff pastry into a 13 by 9-inch rectangle. Use a knife or a dull edge to lightly trace a border around the edges, about 1 inch from the sides. Prick the center inside the border with a fork to prevent puffing.
- Add Butter and Sugar to Border: Brush the traced border with melted vegan butter, then sprinkle sugar evenly over it to create a sweet, crispy crust.
- Assemble the Tart: Spoon the prepared cream cheese mixture into the center of the pastry, inside the border. Layer the sliced peaches evenly on top of the cream cheese, and dot the surface with fresh blueberries.
- Bake the Tart: Place the tart on the prepared baking sheet and bake in the preheated oven for 25 to 30 minutes, or until the pastry is golden brown and cooked through.
