Instructions

  1. Preheat and Prepare Baking Sheet: Preheat your oven to 425°F (220°C). Lightly grease a baking sheet or line it with parchment paper to prevent sticking and ensure easy cleanup.
  2. Make Parmesan Breadcrumb Mixture: In a medium bowl, combine the Panko breadcrumbs, grated Parmesan, chopped fresh parsley, garlic powder, lemon zest, salt, and black pepper. Stir in the melted salted butter until the mixture is crumbly and well blended.
  3. Prepare the Cod Fillets: Pat the cod fillets dry with paper towels to remove excess moisture. Season both sides lightly with salt and pepper. Place the fillets on the prepared baking sheet, evenly spaced.
