Description

A hearty and flavorful one-pan ground meat and potato skillet that’s perfect for a quick and easy weeknight dinner. This versatile dish combines ground beef, turkey, or chicken with golden potatoes, vibrant bell peppers, and aromatic spices, all cooked together in a single skillet for a satisfying meal. Optional melted cheddar cheese and fresh herbs add a delicious finishing touch.

Ingredients

Scale

Main Ingredients

  • 1 pound ground beef, turkey, or chicken
  • 2 tablespoons olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 3 medium potatoes, diced into ½-inch cubes
  • 1 red bell pepper, diced
  • 1 teaspoon smoked paprika
  • ½ teaspoon dried oregano
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Optional

  • ½ cup shredded cheddar cheese
  • Chopped parsley or green onions for garnish

Instructions

  1. Prepare the potatoes: Heat olive oil in a large skillet over medium-high heat. Add diced potatoes and cook for 10–12 minutes, stirring occasionally, until they turn golden and are tender inside.
  2. Cook the ground meat: Push the potatoes to one side of the skillet. Add the ground meat to the empty side and cook for 5–7 minutes, breaking it up as it browns to ensure even cooking.
  3. Add aromatics and vegetables: When the meat is almost cooked through, stir in the diced onion, minced garlic, and diced red bell pepper. Cook together for 3–4 minutes until the vegetables soften.
  4. Season and combine: Sprinkle smoked paprika, dried oregano, salt, and black pepper over the skillet. Stir everything together thoroughly and cook for an additional 2 minutes to blend the flavors well.
  5. Melt cheese (optional): If desired, sprinkle shredded cheddar cheese over the skillet. Cover it with a lid and let it melt for 1–2 minutes.
  6. Garnish and serve: Remove the skillet from heat. Garnish with chopped parsley or green onions before serving for a fresh burst of flavor.

Notes

  • Great recipe for using up leftover vegetables—try adding spinach, zucchini, or mushrooms.
  • Switch up proteins by using ground turkey, chicken, or beef depending on preference.
  • Serve with a fried egg on top for a hearty breakfast-for-dinner option.
  • Leftover skillet can be stored in the fridge for 2-3 days and reheated on stovetop.
