Instructions

  1. Prepare the pan: Grease an 8×8-inch square pan and set it aside to ensure the fudge can be easily removed once set.
  2. Combine ingredients: In a heavy-bottomed saucepan, mix together the granulated sugar, unsweetened cocoa powder, whole milk, and salt. Stir over medium heat until the mixture starts to boil.
  3. Boil to soft-ball stage: Stop stirring once boiling begins and allow the mixture to boil until it reaches the soft-ball stage, between 234–240°F on a candy thermometer. This process takes about 10 to 15 minutes and is critical for correct fudge texture.
  4. Add butter and vanilla: Remove the saucepan from the heat and add the unsalted butter and vanilla extract without stirring. Let the mixture cool undisturbed for about 5 minutes until the bottom of the pan is only warm to the touch.
  5. Beat the fudge: Once slightly cooled, vigorously beat the mixture with a wooden spoon for 5 to 8 minutes until it thickens, loses its gloss, and starts to hold its shape.
  6. Incorporate walnuts: Quickly fold in the chopped black walnuts to evenly distribute the nuts throughout the fudge.
  7. Set the fudge: Pour the fudge into the prepared pan and smooth the top. Allow it to set completely at room temperature before cutting into 25 small squares.

Notes

  • Do not stir the fudge while it is boiling; stirring can cause crystallization resulting in grainy texture.
