Description

No Fail Jello Divinity is a classic, foolproof candy recipe that combines the light, fluffy texture of divinity with the fruity sweetness of Jell-O. Perfect for holiday gatherings or sweet cravings, this colorful treat is sure to be a hit with everyone.

For the Divinity:

  • 2 1/2 cups granulated sugar
  • 1/2 cup light corn syrup
  • 1/2 cup water
  • 1 (3 oz) box flavored Jell-O (any flavor)
  • 2 large egg whites, room temperature
  • 1/8 teaspoon salt
  • 1 teaspoon vanilla extract (optional)
  • 1/2 cup chopped pecans or walnuts (optional)


Instructions

  1. Cook Sugar Syrup: In a heavy saucepan over medium heat, combine the sugar, corn syrup, and water. Stir until the sugar dissolves, then stop stirring and bring the mixture to a boil. Continue cooking until the syrup reaches 250°F (hard-ball stage) on a candy thermometer.
  2. Beat Egg Whites: While the syrup cooks, beat the egg whites and salt in a large mixing bowl with an electric mixer on high speed until stiff peaks form.
  3. Add Jell-O: Once the syrup reaches 250°F, remove from heat and quickly stir in the dry Jell-O powder until fully dissolved. Slowly pour the hot syrup in a thin stream into the egg whites while beating on high speed.
  4. Beat Mixture: Continue beating for 6 to 8 minutes, or until the mixture loses its gloss and starts to hold shape. Mix in the vanilla extract and nuts, if using.
  5. Shape and Set: Quickly drop spoonfuls of the divinity mixture onto waxed or parchment paper. Let them set at room temperature for several hours, or until firm and dry to the touch.

Notes

  • Humidity can affect divinity—make it on a dry day for best results.
  • You can change the Jell-O flavor to suit different holidays (cherry for red, lime for green, etc.).
  • Store in an airtight container at room temperature for up to 5 days.
