Biscuit Base

  • 200g digestive biscuits (or plain biscuits), crushed
  • 1/2 cup unsalted butter, melted
  • 1/4 cup honey or maple syrup

Earl Grey Mint Mixture

  • 2 Earl Grey tea bags
  • 1/2 cup boiling water
  • 1/2 tsp fresh mint extract (or 1 tbsp finely chopped fresh mint leaves)

White Chocolate Mint Topping

  • 200g white chocolate, chopped
  • 1/4 cup double cream (heavy cream)
  • 1/4 tsp vanilla extract
  • A pinch of salt


Instructions

  1. Prepare the Tea Mixture: Brew the Earl Grey tea by steeping the two tea bags in 1/2 cup of boiling water for 5-7 minutes. Remove and discard the tea bags, then set the tea aside to cool slightly.
  2. Prepare the Biscuit Base: Crush the digestive biscuits into small pieces in a large bowl. In a separate bowl, mix the melted butter with honey or maple syrup. Pour this over the crushed biscuits and stir until all the biscuit pieces are evenly coated.
  3. Add Mint Flavor: Stir the fresh mint extract or finely chopped fresh mint into the cooled Earl Grey tea. Pour this mixture into the biscuit mixture and mix thoroughly to combine all flavors evenly.
  4. Press the Base into the Pan: Line an 8×8-inch (or similar size) square pan with parchment paper. Transfer the biscuit mixture to the pan and press it down firmly and evenly to form the base layer. Place the pan in the refrigerator while you prepare the topping.
