			Main Ingredients
- 1 cup old-fashioned rolled oats
- ½ cup natural peanut butter (or almond butter)
- ¼ cup honey (or maple syrup for a vegan option)
- ¼ cup mini chocolate chips (optional)
- 2 tablespoons ground flaxseed (optional, for extra fiber)
- 1 teaspoon vanilla extract
- Pinch of salt (optional)
- 1 tablespoon chia seeds (optional, for added protein)
Instructions
- Mix the Ingredients: In a medium-sized bowl, combine the oats, peanut butter, honey, chocolate chips, flaxseed, vanilla extract, and chia seeds if using. Stir the mixture until everything is evenly incorporated and sticky enough to hold together when pressed.
- Chill the Mixture: Cover the bowl and place it in the refrigerator for about 15 to 20 minutes. This helps the mixture firm up, making it easier to roll into bite-sized balls.
- Form the Bites: After chilling, use your hands to roll the mixture into approximately 1-inch diameter balls. If the mixture feels too sticky, dampen your hands slightly with water to help shape the bites easily.
- Store: Place the formed energy bites on a parchment paper-lined baking sheet and refrigerate for an additional 30 minutes to fully set. Then transfer them to an airtight container for storage.
- Serve: Enjoy these energy bites as a healthy snack. They can be stored in the refrigerator for up to 1 week or frozen for up to 2 months to maintain freshness.
Notes
- For a vegan version, substitute honey with maple syrup.
- Feel free to customize with nuts, seeds, or dried fruit as desired.
- If the mixture is too dry, add a little more peanut butter or honey to help bind.
- Use parchment paper to prevent sticking during chilling.
- These bites make great pre- or post-workout snacks.
