Scale
Main Ingredients
- 1/2 cup (1 stick) unsalted butter
- 2 cups granulated sugar
- 1/2 cup milk
- 1/4 cup unsweetened cocoa powder
- 1/2 cup creamy peanut butter
- 1 teaspoon vanilla extract
- 3 cups quick-cooking oats
Instructions
- Prepare the base mixture: Melt the butter in a saucepan over medium heat. Once melted, add the granulated sugar, milk, and cocoa powder. Stir continuously to combine all ingredients thoroughly.
- Boil the mixture: Bring the mixture to a rolling boil while stirring constantly to prevent burning. Let it boil for 1 minute to ensure the sugar dissolves and the mixture thickens slightly.
- Add peanut butter and vanilla: Remove the saucepan from heat. Immediately stir in the creamy peanut butter and vanilla extract until the mixture is smooth and uniform.
- Incorporate oats: Add the quick-cooking oats to the chocolate mixture. Stir well to coat all the oats evenly with the chocolate peanut butter mixture.
- Shape and set: Drop spoonfuls of the cookie mixture onto a sheet of wax paper or a silicone baking mat. Allow the cookies to cool and set at room temperature for about 30 minutes until firm.
Notes
- Use quick-cooking oats for the best texture and easier mixing.
- For a nuttier flavor, you can substitute creamy peanut butter with natural peanut butter, but ensure it is well stirred.
- If the mixture is too runny, boil for an extra 30 seconds to thicken it slightly.
- Store the cookies in an airtight container at room temperature for up to a week.
- These cookies are not baked, making them perfect for summer or when you don’t want to heat up your kitchen.
