Ingredients
Scale
Butter & Sugars
- 1/2 cup (1 stick) unsalted butter
- 2 cups granulated sugar
Wet Ingredients
- 1/2 cup milk
- 1/2 cup creamy peanut butter
- 1 teaspoon vanilla extract
Dry Ingredients
- 1/4 cup unsweetened cocoa powder
- 3 cups quick-cooking oats
Instructions
- Melt Butter and Combine Ingredients: In a saucepan, melt the unsalted butter over medium heat. Once melted, add the granulated sugar, milk, and unsweetened cocoa powder. Stir continuously to combine all ingredients thoroughly.
- Boil Mixture: Bring the mixture to a rolling boil while stirring constantly. Allow it to boil for exactly 1 minute to properly blend the flavors and ensure the sugar dissolves completely.
- Add Peanut Butter and Vanilla: Remove the saucepan from heat and immediately stir in the creamy peanut butter and vanilla extract. Continue stirring until the mixture is smooth and homogenous.
- Mix in Oats: Add the quick-cooking oats to the chocolate mixture. Stir well to ensure the oats are evenly coated, forming a thick cookie batter.
- Form Cookies and Cool: Using a spoon, drop spoonfuls of the mixture onto a sheet of wax paper or a silicone baking mat. Allow the cookies to cool at room temperature for about 30 minutes until they are set and firm enough to handle.
Notes
- Use quick-cooking oats for the best texture and quicker setting times.
- For a nuttier flavor, try substituting creamy peanut butter with natural peanut butter.
- If you want chocolate variation, mix in mini chocolate chips after the oats for extra chocolate bursts.
- Store these no-bake cookies in an airtight container at room temperature for up to 5 days or refrigerate to extend freshness.
- Make sure to boil the mixture for the full minute to help cookies set properly.
